I wasn't sure what to expect with this because I was unfamiliar with jerk seasoning (not to mention "pineapple coconut rice") but this turned out surprisingly good! The recipe author says not to use brown rice but I just parcooked the rice for 10 minutes with about a cup of water - next time I won't use as much water - then added it in place of the white rice. I really enjoyed the pineapple chunks in the meal. I used probably a bit more than a cup but maybe even more next time.
I'll also need to use more oil to cook the chicken thighs. I marinated them for 50 mins and cooked them probably around 7 minutes on each side but some bits charred at the bottom of my cast iron pan and my rice got a slightly burnt flavor to it.
