This turned out pretty good but I'm not sold on the coconut milk. I may sub an oat or rice milk next time and thicken with flour just before adding it. I brined the pork chops for a few hours, rinsed and dried with paper towels, seasoned and seared. It turned out incredibly moist.
I served with egg noodles and french green beans sauteed with shallots, garlic and a few of the mushrooms chopped.
