I loved it, but my husband did not (the only squash he likes is butternut). I think it was a bit tricky to get the squash out, and one serving ended up being way too much food- I'm pregnant and eat a lot, so this means something!
Instead of kale I used peas. I also used italian chicken sausage precooked links which I browned begore stuffing the squash.
Next time:
I may make this into a sheet pan meal instead of a stuffed squash. This way I can save leftovers without the worry of bacteria growing (from a used fork digging back into the squash for another bite).
