I doubled the Cajun seasoning, and cooked the chicken with some Cajun seasoning and salt/pepper. I also used freeze dried basil. It was really tasty and super simple. I also cooked some tail on shrimp in butter and Cajun seasoning and added at the end, pouring the butter over top of the whole dish. I also cooked the bell pepper, onion, and celery first for about 4 minutes and then added the garlic until fragrant. (About 30-45 seconds) because 4 minutes for garlic is just too much.
