This is my go to base for mac n cheese. I do the 5 cheese blend option with 2 cups cheddar and 1.5 cups gruyere and then whatever se I have available (colby jack, provolone, mozzarella, pepper jack, gouda, chream cheese...) no matter what combo I use it is always good. I also add a touch of garlic or onion powder, ground mustard, and pinch of cayenne pepper. Whatever you like.
