I made this Thai-style curry for the first time, a few nights ago, and we had the leftovers for dinner last evening. The flavor was creamy, spicy, and delicious when served over white rice! It was also very easy to make, and took about 1 hr. and 5 mins. from start to finish. I used the Maesri brand of Massaman curry paste, which is popular, inexpensive, and easy to find in large supermarkets and Asian grocery stores. This one is definitely going into the regular dinner recipe rotation. Highly recommended!
