So, the picture doesn’t do it justice, but it was absolutely delicious. I will say I had make a few substitutions mainly the red curry paste and the noodles & I ended up making my own powder version of the red curry paste and I used angel hair pasta noodles (because that’s what I had on hand) but it was still a great fall dinner.
Next time I make it I’ll definitely follow the recipe more closely; I don’t think I used enough spice… but I was by no means disappointed. Overall, I’m really excited to make this again & use this soup as a base in the future. :)
