This dish came out exceptionally well. You could swear that there is cream in it. The cashew milk makes all the difference and is rich and creamy. It does take a bit longer than they say, but it is well worth the time. I added a bit of cayenne at the end just to give it a bit of a kick. Also, it takes a generous amount of salt. After following the recipe, I was able to add another 4 cups of broth because I had extra kale and just tossed that in. Next time I think I will use more sun-dried tomatoes and add fresh mushrooms. It made a great big batch that I can freeze and eat off of for days lol.
