Don’t be dissuaded by the number of ingredients. This is relatively easy, adaptable, and depending on the number of people you’re feeding, makes leftovers. I doubled the peppers, added 2 cups of broccoli, and pumped the seasoning significantly. I also used a can and a half of the coconut milk, rather than 2 cans. I’m thinking 1 can would be sufficient.
Edit: Made it again, and Hubs and I enjoyed it. I did cut back to one can of coconut milk, and that was sufficient for us. Also used shrimp instead of chicken and it was tasty.
