I basically used this recipe as a base. This I'd exactly what I used (so I can repeat it again,just like this!):
2 chicken breasts, chopped
1 chopped onion
2 chopped green peppers
2 cans each of black and white northern beans rinsed
2 cans diced tomatoes (not drained)
1 can of corn (not drained)
1 can green chiles
28 oz can green enchilada sauce
1 block of cream cheese
32 oz chicken broth
I cooked the chicken, peppers, and onion in 2T avocado oil, and threw everything else in the pot once the chicken was cooked.
We put shredded cheese on it in our bowls. It was soooo good!! I will definitely make it like this again! Even my pickiest eaters ate it...maybe we're turning the corner on the picky eating, because I totally didn't expect them to eat it!
