I’m guessing that your baking powder was old or the right amount of baking powder did not go into your batter? Did you use “baking soda” instead by mistake possibly. Best if cooked on a hot griddle, but I usually use an iron skillet. Preheat it on high after using oil on a paper towel and swishing it around. You will know if it’s time to pour a pancake if you put a couple drops of water and they sizzle and dance. I use a ladle to put the batter in the skillet. Then reduced my heat just a tiny bit. You will see bubbles come thru the batter on top. When they are full all over your pancake. It is time to turn them over. Make some more and post a picture. I think you will like them better! Edit: put a couple drops of water off a wet spoon into your hot skillet carefully
