Overall a really easy dish. I enjoyed only having to use one dish and having very little prep work.
After the hour mark I stirred just the rice to help even out the cooking before broiling. My chicken cooked fully within the hour so the 30 min uncovered wasn’t needed; I went straight to broiling for 5 mins.
Next time I make this I want to try using rotisserie chicken. I think the flavor would work well with the rice.
