I made this into 12 mini pies with a homemade pie crust. They turned out AMAZING!
This was the first time I have ever had a sweet potato pie, and it amazed me how fluffy and light it is.
Changes made:
1) I did add just a little more cinnamon than the recipe calls for
2) I also used my own home canned sweet potatoes. I drained them before mixing for this recipe
3) I made in a dark muffin tin. They were baked for 36 minutes
