I made it from wholemeal spelt flour and it became really light and fluffy. Tastes nice too, very mildly sweet.
I tried the tip of washing frozen blueberries until they no longer stain the water to avoid the muffins being blue, and even though the water never stopped being stained, it seemed it did release a bit less colour into the batter.
