Very easy to make. I added some mixed spice because it needed using up and gave the cookies a nice warmth. Mine came out a lovely soft, almost cake like, texture which is what I was after. Think it would be quite a forgiving receipe so you can add in extra spices, nuts or chocolate drops depending what you have in the cupboard. Will definitely make again.
