super delicious and easy! didn't have pumpkin pie spice, so i just threw a mix together. (i halved the recipe but doubled the vanilla because you can't have too much vanilla). i let the chia seeds sit overnight and cooked the apples (in avocado oil and cinnamon) just before eating. was surprised how simple and satisfying and filling this was with very little sugar (yet still perfectly sweet). definitely in the rotation. could do well as a dessert too! (be wary if you don't like chia pudding consistency / texture though.)
