Chia seed pudding is one of my favorite things to make as of late. Which is funny because I went years without making it - clearly I was missing out. I love how nutrient dense it is and how easy it is to manipulate the flavors. This apple pie chia seed pudding is a fun fall twist on your typical chia seed pudding. Another great thing about chia seed pudding is that it is so easy to make and can easily be prepped ahead of time. All you have to do is mix up your ingredients and then let it set in the fridge for at least one hour, or overnight if that is easier for you. This chia pudding does have one extra step of cooking the apples, but even that only takes 10 minutes. This chia seed pudding is packed with healthy fats, fiber and protein. The apples also add some extra vitamin C and nutrients. All of the nutrients make it the perfect healthy breakfast or snack. This apple pie chia seed pudding is perfect for fall.
