This was delicious - maybe the best traditional pot roast that I have made in the Instant Pot. I will add it to the winter rotation. However, just a "heads up" it takes much longer that you think it will with two separate pressure cycles. And for me 3 minutes was too long for the vegetables - I actually think you could just bring them to pressure and then 0 time with a 5 minute natural release.
