Having read previous comments I reduced to 3 cups of beef stock, I doubled the herbs, I added half a teaspoon of both garlic powder & onion powder with 2 tbspn of tomato puree (known as tomato paste in some countries) and finally some mushroom ketchup which enhances flavour. It turned out really tasty!
It's cooks for longer than many beef dishes I've made in my Ninja foodi at double the time which has made the meat much more tender but it has overcooked the vegetables with the potatoes mainly disintegrated despite being careful to cut to 1" as per recipe. Next time I will cut all veg bigger.
