So this recipe has a very confused flavor profile. People are saying it's bland, but it would be more appropriate to say it has no depth of flavor. The zucchini doesn't add flavor complexity. The coconut milk and smoked paprika are a strange addition. If you remove these two ingredients, it becomes closer to an Italian flavor profile. However, with everything together as the recipe calls for, it's muddled and confused. You can't really tell what the flavor is because you've got a couple of strong flavors fighting over one another. The closest thing I could say it tastes like is...salt and acidity. Some flavors are just not meant to be mixed. Stick to what works. This just isn't it.
Side Note: I chose not to blend some of the zucchini. Having that textural difference was pleasant and worth it.
