Added 1 C baby bella mushrooms, added 1 C unsweet almond milk to egg mixture, added two mini bell peppers (yellow and orange). The sausage mix served 24 1/4 c servings PLUS two batches of 8 eggs and 1 c almond milk for 24 muffins. Cooked 25+ minutes in a silicone muffin tray. Made 24 muffins / 12 servings.
