2024: added chopped apples and pecans before baking. Would add even more next time. Used one sourdough batard and one french batard for 20 people. 1.5 x the other ingredients. Made it veggie with veggie stock.
2023: Made the day before but refrigerated covered prior to baking. Reserved half of the egg/stock mixture to add before baking depending on how wet it seemed. I did end up adding all of the rest prior to baking. Waited to add the pecans until just before baking for added crunch. It was delicious but missing depth of flavor. Next time I would saute the turkey giblets and maybe some chicken giblets in butter, puree and add to the mix.
