I roasted the squash (butternut) while the stew meat was cooking. Also I put the veggies on top of the stew meat in the instant pot and pulled them out and puréed the four tomatoes and 1/2 onion to thicken and smooth out the soup base a bit. Used 1/2 cup wine. Tomatoes weren’t part of original recipe. Happy family!
