Great recipe! My substitutions were minimal and not really necessary but I'll record them anyway.
I added about 1/2 tsp cayenne pepper and used 4 full salt chicken bouillon cubes (I'll probably use 6 next time but i ran out). Also used 2 peeled russet potatoes instead of baby potatoes and used about 2 tbsp rice vinegar instead of lemon juice.
Love yourself and eat it with some good garlic bread
