This was an easy, and very quick dish to make, and it tasted great too!
I used two large chicken breasts cut in half (butterfly style), and one can of navy beans. I had pepper jack cheese and smoked cheddar instead of the Monterey Jack (since I had the former on hand and none of the latter) and actually highly recommend that blend.
I was in a hurry, so I didn't make any bacon crumbles for the top, but I do think they'd be an excellent addition.
Bowls were emptied pretty quickly, so I think the family enjoyed it a lot.
It took a little longer than recipe said, mostly due to prep time being a lot, but with the thinner chicken breast, the cook time was less.
