So good!!!! Easy yes, but 10 minute prep, no. Prep was 45 minutes.
Followed recipe, but did not add salt, doubled pepper and turmeric, added 1/2 tsp red pepper flakes instead of cayenne pepper.
Used Medium spicy enchilada sauce (need 30 ounces sauce). Used low carb spinach tortillas (made 8).
Do not forget lime, avocado, and cilantro!
