There are a lot of things you can do to make ANY recipe to your taste and/or your health preferences. Experimenting is the key for us. I'm turning 62 and I have done it ever since I started cooking. If you're afraid of what it will taste like, make a smaller amount until you perfect it.
I wouldn't consider cream of mushroom soup a healthy option either. Lol
