Delicious, easy to make, and not very time consuming. I made the filling the day before our gathering and let the roll chill in the freezer for 20 minutes before cutting it. I used three large-ish potatoes, which was enough to make three rolls. You don't need to leave much of an edge if you layer the filling evenly and relatively thinly.
