½ cupfrozen peas

¼ tspturmeric powder
¼ tspred chili powder
dark, kashmiri, or paprika +
½ tspgaram masala
½ tspamchur
mango powder, can sub with lemon/lime
salt
to taste
1 bunchcilantro
chopped
Puff pastry sheet
thawed in the fridge, I tried Dufour and Wewalka and preferred the latter
Egg wash
1 / a splash of water, can sub butter
Instructions
Step 1
- Add oil to a hot pan, & then cumin and fennel seeds. Once they start wiggling around, add onions, garlic, chilies and sauté for a min.
Step 2
- Add turmeric, red chili powder, garam masala, ginger, and salt - sauté for a couple min, and then add peas and potatoes. Cook for a few min.
Step 3
- Top with mango powder. Alternatively use a few squirts of lime or lemon, and half the cilantro.
Step 4
- Spread over a large plate / tray and cool in the fridge for 20-30 min. Alternatively, you can also make this ahead of time.
Step 5
- Preheat your oven and roll out your puff pastry sheet on a flour dusted surface (if it doesn't come with parchment paper) so it doesnt stick.
Step 6
- Quickly spread your filling mixture, leaving space on the edges to seal. Top with more cilantro.
Step 7
- Gently start rolling into a tight log.
Step 8
- Optional - cover in plastic wrap and pop in the freezer for 10-15 min so it firms up to make for easy cutting and handling. Cut in half inch rounds Cover in egg wash for lamentation. (optional)
Step 9
Place on a parchment lined tray and bake at 400F (200C) for 15-20 min until golden. You can also brush them with some melted butter for a glossy finish.
