Instead of Cajun seasoning, used the following: 1/2 tsp white pepper, 1/2 tsp black pepper, 1/2 tsp oregano, 1 1/2 tsp paprika, 1/2 tsp salt. Added extra amounts of fresh garlic and fresh onion since I didn't have those in powder form.
Also, didn't cook rice with jambalaya since we already had cooked rice.
Added mushrooms since we didn't have enough chicken.
