My roast set out an hour but was at 54 degrees when it went into the oven. It took 3 hours at 325° to come to 125°F.
I used the seasonings recommended and made a compound butter and rubbed that on the roast before cooking. It developed a lovely crust. We were starving by the time it was done and uncovered so I forgot pictures. I got compliments from everyone on the meat preparation.
