Made some substitutions based on what I had on hand and it was still amazing! And my toddler went to town on this! New family fave! My skillet was too small so I used the Dutch oven!
Substitutions:
*Mixed a can of tomato paste with enough water to equal the ounces needed of canned tomatoes.
*water instead of broth
*dried basil instead of fresh
*no bell pepper, did 1.5 onions
I seasoned both sides of the thighs before searing, and seasoned the sauce and rice before adding the chicken, so I think that greatly helped my bland substitutions!!
