I didn't have any lentils so I used chickpeas instead. Very tasty and filling dish. I put some chopped up romaine on after I reheated it for some texture and crunch.

Canned lentils work well in a pinch!

I couldn't find any canned lentils! I tried two grocery stores. I'll just try to keep an eye for them when I shop. :)
