Soft, but well-structured cookie! It's not sweet by itself, but paired with a royal icing decore and a delicious balance is the result. This was my first attempt, but I felt it went well. The dough felt a little dry and too crumbly after combining all of the flour, but I kept working it and rolling it out, and it turned out very nice for cookie cutters. Bake with parchment paper and enjoy. We baked on a Thursday, decorated on Saturday and served on Monday and they were still soft and delicious!
