This went over surprisingly well with both of us, even without the oil in step one that wasn't included in the ingredients. I decided that the fat from browning ground beef would be plenty to cook the onions in.
My picky son would've preferred more meat to rice. I think I'd like more Velveeta - but not nearly as much more as I thought when the rice mixture was cooking (a huge surprise to me). It wasn't spicy (yay!) and it was very filling. Not sure whether the other two household members would enjoy it, but I think it's worth another go.
I need to work on my burrito rolling technique. So embarrassing.
