Used oat milk, vegan chicken broth, vegan chicken pieces, left out salt, and halved the recipe. I only needed to simmer it 12 minutes before it was thick enough. It made 1 can's worth of cream of chicken soup and I used it in mini chicken pot pie biscuits. I have also made an alternative version with celery instead of meat pieces (cream of celery soup). I bet diced mushrooms would be good too (cream of mushroom soup).
