Made it as is (with slight adjustments to cooking times detailed below), then added 2 cups more broth and red pepper flakes.
Added the vegetables in stages per other notes. I let the rice cook 10mins, added the sweet potato, let that cook 10 mins, added the celery and carrot, then at the end I added sautéed mushrooms and greens.
30 minutes would have been better than 35/40 because the rice got very soft.
Might try again with regular cream
instead of coconut milk for a different vibe.
