Hi Nimish! You can use any bouillon of choice! I suggest starting with 1/2 tbsp and working your way up since it’s preference. You can always add more if you like it saltier.
The 1/4th cup is reserved for your chicken if it dries out. It will give it moisture and flavor if necessary.
You won’t use the same boiled vegetables because the chicken impurities stick to them! Just use the roasted vegetables.
You can save the chicken water or throw it out.
Removing or keeping the bay leaves is a personal preference. I typically throw them out.
