My version with items to hand that needed to be used after the festive season.
Melt butter and a splash of cooking oil in pan.( I like to use a wok)
Sautéed onions and lots of crushed garlic to taste.
Sprinkle of rainbow pepper to taste.
Diced smoked cooked ham ( left over from festive season)
Mushrooms.
Once this is all cooked together add fresh cream and bring GENTLY to boil , then simmer , stirring constantly until sauce thickens.
Plate up pasta and top with carbonara mix.
Add grated cheese of choice to taste.
I did not have cheese handy to day,
but it still tasted decedent.
I usually add chopped spring onions as I’m plating it but again did not have any to hand to day.
I served with fresh garlic and herb naan breads torn into segments for dipping in the sauce
