Step 1
Bring water to a boil in a pot then add a generous pinch or two of salt and add the spaghetti . Cook according to package instructions . Mine takes 10-11 minutes

In a pan heat two tablespoons of olive oil then bash a clove of garlic with a knife and throw it in the oil to flavor it for a minute . Next dice some
pancetta or smoked pork cheek if you can find it and fry it until it starts to color at which point you can remove the garlic . Garlic is not traditional in carbonara so if your prefer you can leave it out but I think it gives a nice little flavor kick as I love garlic .

Step 3
In a bowl whisk three egg yolks with Parmesan and lots of black pepper . Next toss the cooked spaghetti into the pan with the bacon drizzle a little pasta water on it . Remove from the heat and toss in the creamy egg sauce . Add a little more pasta water to loosen the sauce then add more Parmesan and pepper to garnish and enjoy
