Love this soup! When I make it again, instead of two cans of tomatoes, I would only include one can and put about a tablespoon of tomato paste when frying the carrots/celery/onions. I would also include a spoonful of vegetable bullion base for a bit of extra flavor (I made this soup vegetarian). Also, I would recommend cutting the potatoes up in 1x1cm cubes. I made mine large chunks and the texture wasn't quite right.
