This Vegetable Soup has become one of my most popular soup recipes and for good reason! It's healthy, it's comforting and 1,000 times better than what you'll get in a can! Makes 15 cups.

2 Tbspolive oil

1 ½ cupsyellow onion

chopped, 1 medium

2 cupscarrots

peeled and chopped

1 ¼ cupscelery

4 x 14.5 ozcans low-sodium chicken broth

or vegetable broth

2 x 14.5 ozcans diced tomatoes

3 cupspotatoes

peeled and 1/2 - inch thick, diced, medium

⅓ cupfresh parsley

½ tspdried thyme

or 1 Tbsp fresh thyme leaves

freshly ground black pepper

1 ½ cupsfrozen green beans

chopped, or fresh

1 ¼ cupsfrozen corn

1 cupfrozen peas

Love this soup! When I make it again, instead of two cans of tomatoes, I would only include one can and put about a tablespoon of tomato paste when frying the carrots/celery/onions. I would also include a spoonful of vegetable bullion base for a bit of extra flavor (I made this soup vegetarian). Also, I would recommend cutting the potatoes up in 1x1cm cubes. I made mine large chunks and the texture wasn't quite right.

It was delicious, but it needed a few more spices, so I added some garlic powder, and basil.

Good recipe. I think it needed a bit more seasonings so I added basil and garlic powder. Ended up great. Also used crushed tomatoes instead of diced. Next time I’ll add fresh shredded parmesan and a few dashes of hot sauce.
