It was OK. We mostly found it just tasted like lemon. I thought it tasted like lemon zest specifically, too much. It also lacked flavour otherwise. It was healthy and filling though! It was enjoyed by one in my family, tolerated by another, and disliked by another. I leaned toward not liking it, but the more I ate, the better it got for some odd reason, and now I lean toward liking it! I added a handful of spinach when I realized how too little the recipe called for. If I make this again, I'll at least double the amount. I also chopped up and toasted cashews, as a substitute to the pine nuts, since my store didn't have them. I absolutely would add much more feta cheese too!! This took me about two hours to make, because I like to prep everything ahead of starting to cook.
Next day update: I took leftovers for lunch today, warmed it up in the microwave for a couple of minutes, and it came out tasting so good!! Always a win when your leftovers taste good.
