On the plus side, the pork turns out very moist after simmering in the sauerkraut juice. If you like things spicy, there is LOTS of paprika & pepper in the balance of this recipe, so my husband (who loves spicy) really enjoyed it. He is also not a super-fan of sauerkraut, and said all the spices in this recipe did a great job of masking the part of sauerkraut that he doesn't like. On the flip side, if you don't love spice, this recipe is overpowering. On the meat, I found it to be spicy-but-good. However, the paprika flavor concentrates in the sauerkraut, completely altering its flavor, and that was TOO much. For our family, I think cutting the spice in half might be a good compromise.
Good pairing: mashed potatoes, and steamed green beans
