This was very good. These are the things I altered. 1) I used Tuscan infused Oliver oil. Added a really nice subtle flavor. 2) I did a pinch of finely shredded pecorino cheese under each potato. Yum! And then a tiny pinch on top in the last 10. 3) My oven runs cool so I ran under the broiler for about 7 minutes. Total cook time 45 minutes.
