I changed this quite a bit. We are not vegan, so I used queso fresco, I also used black beans instead of cannellini beans (drained and rinsed). I omitted all the peppers, I didn’t think it needed it and made sure to season the corn with the listed seasonings while it was cooking. I doubled the fresh lime juice and it really turned out amazing. A winner in our house! Next time I might add tomatoes and avocado!
