This has a nice health rating and is very tasty! After reading the reviews, I followed the advice of those who said the spices were too much. I put a quarter teaspoon each of cayenne and red pepper flakes. I used a teaspoon for the other spices and the blend was perfect. It had some heat but only enough for great flavor. In my dish, I added diced tomatoes for a more rich flavor. Overall, this is a really yummy meal. I think the directions are a bit wonky, but this is one of those dishes you can tailor to your own taste. I cooked the rice separately. Again, that was suggested by many reviewers that decided to go that way. I believe it made the rice better than cooking it inside this meal because it might’ve come out very mushy and I used a Dutch oven to cook. Furthermore, I added the bell peppers last so that they would simmer with the rest of the meal for the last 15 to 20 minutes. They cooked during that time. Otherwise, I felt they would’ve come out very mushy; this way, they were perfect. I scaled the recipe for eight people. And we have a ton of leftovers and it made lunches for my husband. we froze two of them and left three of them out for his work week starting today and I have plenty of leftover for myself i to snack on over the next few days.
