Red Beans & Rice with Sausage

I use turkey sausage in this recipe to keep it relatively healthy. Feel free to use any kind of sausage of your choosing. Scale the cayenne & red pepper flakes up or down depending on your desired level of spice.

Ingredients

13 ozturkey sausage
sliced
1 cuplong grain rice
1red bell pepper
sliced, or diced Dealers choice
1green bell pepper
sliced, or diced Dealers choice
0.5yellow onion
2cloves garlic
minced
1 cupdry white wine
16 ozlow sodium chicken broth
0.5Chicken Bouillon cube
16 ozred kidney beans
drained & rinsed
1 tablespoonthyme
1 tablespoonsmoked paprika
1 tablespoonchili powder
½ tablespooncayenne pepper
½ tablespoonred pepper flakes
1 tablespoondried oregano
salt
to taste

to taste
2 tablespoonsolive oil
Instructions
Step 1
Slice the sausage. Add olive oil to a pan & sear the sausage. Really looking to gain some color and flavor the pan. Probably takes 3-4 minutes each side of sausage. Remove sausage once complete.
Step 2
Add in a dash more olive oil (if needed) & sauté the onion and garlic for about 3-4 minutes, or until soft and fragrant. Add in the bell peppers, Cajun seasonings (paprika, cayenne, red pepper flakes), and bouillon cube.
Step 3
Pour in dry white wine. Scrape bottom of pan to ensure flavors from the sausage mix into the veggies. Once reduced by 50% add in rice & cook for 3-4 minutes.
Step 4
Add the beans & sausage into the mixture. Pour in the chicken broth, add herbs, & bring to a low boil. Once low boil achieved, immediately reduced to a simmer. Cook partially covered until rice is completely cooked and liquid is absorbed (15-20 minutes). If liquid disappears and rice is not done, add water.
