Lovely tasty easy to make meal. I omitted the spinach because we didn’t have any in. I also used chipotle seasoning instead of just chilli powder for a little more depth. I also let the whole thing have a couple of minutes at the end of the cook without the lid on because there was still a lot of fluid in the pan, but this did the trick. All in all, would definitely go to again for a healthy on plan tea or batch cooking.
