Can't go wrong with white chicken chili. I adapted recipe to what I had on hand and just did it on the stove. I used only one pot. Browned the cooked chicken while sauteing the onions. Mainly I had to swap the 2 grn chili for 1 Rotel, didn't have any corn(dang it!), and used whipping cream instead of half and half. As it was almost done I did a taste test and added some more of the seasonings and ended up using the total 8oz of cream cheese. Really missed having the corn in it tho. I will make sure I have it on hand next time👍
